Taco Bronco

You’ll find the trailer Taco Bronco in the shady backyard of Saddle Up in East Austin, parked right next to the Micklethwait trailer. It’s from the team behind Micklethwait Craft Meats, one of the best barbecue spots in town. It’s what happens when you merge a taqueria with Texas barbecue—essentially smoked meat tacos and Tex-Mex. The taco menu includes crispy carnitas with griddle cheese and pecans, brisket suadero, and smoked chicken tinga. There are also nachos, quesadillas, and an enormous burrito that comes filled with smoked brisket and potato hash and then gets topped with queso and shredded cheese.
